Marta's Special Granola

2 bananas, peeled and diced
1 cup dates, pitted and chopped
1/4 cup golden raisins, chopped
1 small (5 1/2 oz) can apple juice
1 tablespoon vanilla extract
1 teaspoon ground cinnamon
8 cups quick cooking oats
8 ounces dried mixed fruit
(hopefully a combination with apricot and pineapple, maybe) organic non-sulfated?
6 ounces blanched slivered almonds
2 ounces whole raw pumpkin seeds, chopped or whole

Directions
1 Preheat oven to 250 degrees F (120 degrees C).
2 Puree the bananas, dates, and raisins in a food processor. Add the apple juice, vanilla, and cinnamon; mix well.
3 Pour mixture into a large mixing bowl, add oatmeal and mix well. If too dry add hot water 1 tsp at a time. Some people might prefer adding 2-3 tsp mild, good quality oil.
4 Spread onto large baking sheets and bake at 250 degrees F (120 degrees ) for 1 to 1 1/2 hours stirring frequently. Cook longer for crunchier granola, if desired. Once cooled add the dried fruits and nuts, as little or as much as you want, and mix. May get moist if stored frozen or refrigerated. If stored dry on shelf eat within few days. Makes 10 cups.
